I read in the Bill Silvers resto. book if you run straight pipes you need to rejet the carb.
What size jets , and where do I find them?

You will need to run the bike, and check plug color. It will not run as well with straight pipes, due to lack of back pressure. Nick at Ohio Cycles will probably be the best source for jets, or post in the parts wanted section on this site.
